Ah yes, venison summer sausage and chorrizo. My favorite way to process venison. For you Maine boys, chorrizo is traditionally made with pork. It's a red-chili/meat (breakfast sausage) that's got a bite to it! :twisted: Wonderful dish when mixed with scrambled eggs and rolled up in a flour tortilla.

Check out the recipe forum, I have posted several different sausage recipes I have made using elk, deer, javelina and mtn lion. The chorizo is a very good one, I have had mexicans ask me what carneceria it came from, I tell them Un Pinche' Gringo Carneceria.
