Rick, season the meat however you desire then smoke/cook using the 3-2-1 method. 3 hours smoke, 2 hours wrapped in “peach paper” , 1 hour opened back up with a nice coat of your favorite bbq sauce. Cook at 250-275, I usually use the preseasond ribs from Costco.Looks great RickyG.
Years ago i made pork ribs on the BBQ. Grilled maybe 2 hours and rested for an hour in a paper bag. Best ribs ever eaten.
